This dish has been tweaked a bit since the last time around and will NOT be served with bell peppers- but with brown rice, baby spinach, black beans, Rotel tomatoes, and onions instead. The jalapeno peppers, fire-roasted tomatoes, and chili peppers in adobo sauce together give this dish a nice spicy kick!

Reduce carbs by 20 grams by replacing brown rice with cauliflower rice. Just select “Low Carb” from the options below.

Replace the chicken with meatless Quorn pieces. Just select “Vegetarian” from the options below
